Thanksgiving is a special day to share food with friends & family, and this past week we were fortunate to have many Maine Coast Semester parents visit us for parent’s weekend. We were excited to share a meal with them – including Kitchen Manager Bill Edgerton’s famous Chewonki Gingerbread!

Bill Edgerton’s Famous Chewonki Gingerbread:
- ¼ pound butter
- 1 cup sugar
- 2 eggs
- ¾ cup boiling water
- ¾ cup molasses
- 2 ½ cups flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 2 teaspoons ground ginger
- Strawberry or Raspberry drizzle (optional)
Preheat oven to 350℉. Lightly grease a 9-inch square cake pan. Cream the butter and sugar together until well mixed and light. Beat in the eggs. Beat in the boiling water and molasses. Combine the remaining dry ingredients and mix well with the liquid. Scrape into the pan and bake 35-40 minutes or until a toothpick comes out clean.
